Dwaeji Maeul Sundaeguk 돼지마을순대국

Head meat and lean pork fill the bowl so thoroughly that picking out the meat alone fills you up before any rice goes in. The broth is clean and mild, plain on its own, and gets seasoned at the table with perilla powder, scallions, salted shrimp, dadaegi and black pepper. There is far less sausage than meat.
