Donghae Makguksu 동해막국수

The mul makguksu broth is soy-based rather than dongchimi (radish water kimchi), with a light sheen of fat and savory depth, while bibim makguksu pairs a mild red sauce with sweet fermented pollock (myeongtae-sikhae). Nokdu gamja-jeon, a mung bean and potato pancake, is crisp at the edges and soft in the middle. The shop is a converted old house down a narrow alley, with tables spread across separate rooms and a hallway.
