Ranked among the top three makguksu destinations nationwide, it stays true to the honest, clean flavor of buckwheat noodles without relying on artificial seasonings. The bibim makguksu pairs a mild, non-spicy sauce with myeongtae sikhae (fermented pollack), which adds a unique sweetness, the intended technique is to mix the sikhae only partially into the broth rather than dissolving it completely. The mul makguksu uses a house-made soy sauce-based broth instead of the more common dongchimi, producing a subtly oily richness that grows on you with each bite. Sugar, mustard, and vinegar are provided at the table for personal adjustment. The nokdu potato pancake is crispy and nutty, essentially a must-order side dish. The boiled pork uses a leaner cut that retains some texture rather than melting away.
