Call about 20 minutes before you arrive and they will have the whole hairtail grilling by the time you sit down. The small restaurant is close to Jeju Airport, which makes it easy to time a first or last meal around a flight. A large hairtail is grilled whole and laid on a long platter, the owner takes out the bones at the table, and the roe section, which needs longer, goes back to the kitchen for more heat before it returns. The braised hairtail has a sweet sauce that not everyone likes, but it gets better the longer it simmers.
