Cheongju Bonga 청주본가

Cheongju Bonga is an established rib restaurant on Saun-ro in Heungdeok-gu, Cheongju, centered on wang galbitang and marinated grilled pork ribs. Wang galbitang simmers beef ribs until the meat loosens from the long bones, then serves them in a large bowl of clear broth. Pulling the meat free reveals broad fibers with stock held between them. Rather than relying on the opaque density of a heavily emulsified bone soup, the broth emphasizes beef, radish, and scallion in a cleaner format. The unseasoned first spoonfuls show its salinity and the mild sweetness released by radish. Red seasoning paste can then be dissolved a little at a time, adding chile aroma, heat, and body without immediately changing the entire bowl. Meat removed from the bone can be dipped lightly in soy sauce with wasabi. Salt from the soy and the sharp nasal aroma of wasabi contrast with the fat on the boiled rib. Eating the piece separately produces a more concentrated seasoning than returning it to the broth. Rice can remain on the side to preserve the soup's clarity, or be added so that each grain absorbs stock and gives the spoonful more weight. Kkakdugi and cabbage kimchi contribute cool fermented acidity and crispness between bites of hot beef. Marinated pork ribs follow a completely different cooking route. Broad pieces of pork are coated in a sweet-savory soy marinade and grilled, creating browned edges and rendered fat on the surface instead of the soft, broth-soaked texture of boiled beef. The dining hall includes tables for individual galbitang bowls as well as grill settings for pork ribs.
