Cheonan Gaya Milmyeon 천안가야밀면

Ground perilla seeds go heavily into the sauce for deulgireum milmyeon, wheat noodles pulled to order and dressed with perilla oil. The flavor lands somewhere near seaweed soup mixed with crisp laver chips, odd at first and hard to stop eating; some couples order three bowls between two. The noodles are springy without being tough and go down smoothly. Bibim milmyeon brings a spicy, tangy red sauce instead, and plain boiled pork (suyuk) is on the menu too.
