Camouflage is a fully plant-based American-Chinese restaurant on the second floor of 19 Itaewon-ro 26-gil in Yongsan-gu, Seoul. Its plant chicken is made with soy protein, wheat gluten, soy-milk fiber, and other non-animal ingredients that form visible strands beneath the fried coating. Orange chicken covers the fried pieces with a house-made sweet and tart orange sauce. Kung pao chicken takes the same plant protein into a stir-fry with peanuts, celery, and chilies. Teriyaki chicken uses a sweet soy-based glaze, while mala chicken coats the pieces in a hot, spice-driven sauce. These preparations preserve the crisp exterior and fibrous center but change the sauce and accompanying vegetables. Chow mein stir-fries noodles and fresh vegetables in a savory, spicy peanut-butter sauce. The tofu crumble rice bowl places crumbled tofu and a spicy minced-soy sauce over rice, shifting the main texture from fried protein to soft tofu and grains. Orange salad combines spinach, arugula, orange sections, walnuts, cranberries, vegan Parmesan, and orange vinaigrette. The fresh leaves, fruit, nuts, and plant cheese give it a structure distinct from the cooked noodle and rice dishes. Set plates pair a half portion of plant chicken with chow mein, fried rice, or French fries, keeping the sauced protein beside one starch. The second-floor room uses pale walls, a dark floor, long group tables, and smaller round and square tables. Broad plates expose the coating and inner grain of the plant chicken, while noodles, salad, and rice bowls remain separate dishes.
