Meat, fish, eggs and dairy stay out of the kitchen entirely, with seasoning from house-made jang (fermented pastes) and natural powders instead. The soban set meal brings brown or mixed-grain rice, soup and 8 to 10 seasonal vegetable side dishes that shift a little with whatever greens came in that day.
