Soban is a vegan restaurant on Daeyeong-ro 85beon-gil in Seo-gu, Busan, guided by the motto of serving wholesome home cooking that nourishes the body. The kitchen uses no chemical seasonings whatsoever, relying instead on house-fermented pastes and natural powders for flavor, and the menu excludes all animal products including meat, fish, eggs, and dairy. The standard Soban set meal (approximately 10,000 to 12,000 KRW) arrives with brown or multigrain rice, eight to ten seasonal vegetable side dishes, and soup. The yeonip-bap (lotus-leaf rice) set at around 15,000 KRW features sticky rice steamed in a fragrant lotus leaf accompanied by an expanded spread of dishes; advance reservation is recommended for this option. Seasonal additions such as vegetable dumplings and soy-based bulgogi appear on a rotating basis. Because the kitchen selects the most nutrient-rich greens and vegetables available each day, the banchan lineup shifts slightly from one visit to the next. The dining room occupies what feels like a converted residential home, creating a modest, cozy setting where guests can eat quietly and attentively. The clientele consists largely of health-conscious diners and loyal neighborhood regulars. There is no private parking, and the restaurant sits in a narrow alley, so using the Dongdaesin 2-dong or Buksanri public parking lots and walking over is the most practical approach. The restaurant sometimes closes early when ingredients are depleted, so a phone call ahead is advisable for late-lunch or dinner visits.
