Bukseong Haejangguk 북성해장국

Bukseong Haejangguk is a hangover-soup specialist in Bukhyeon-dong, Seodaemun-gu, Seoul, that has operated for over thirty years and is sometimes named among Seoul's top five haejangguk restaurants. The deeply simmered bone broth is loaded with neck-bone meat to the point of overflowing, and the haejangguk version adds tender dried-radish greens (ugeoji) and fresh ox blood. The ox blood is served on a separate plate with notable freshness, making it a highlight on its own. The house-made spicy red pepper paste, the restaurant's defining condiment, transforms the broth into a pungent, stomach-clearing bowl when stirred in, and adding pickled green chili peppers is another recommended approach. Despite carrying the name yukgaejang, the dish leans closer to a refined beef-and-rice soup, packed with green onions and tender beef that makes a single bowl thoroughly filling. The gomtang option runs on the same bone-broth base with a larger cut of meat, and the brisket quality is strong enough that dipping it in soy sauce becomes a treat. The dining room is notably bright and clean, earning consistent praise for its hygiene standards. Pre-dawn operating hours make it a reliable destination for early-morning recovery after a night of drinking or a warm meal before commuting. One thirty-year regular reportedly drives from Gangseo-gu to Bukhyeon-dong before dawn, proof of the broth's hold on loyal customers.
