Bien Blanc 비엔블랑

Laminated pastry fills most of the counter, made by a baker who appeared on a croissant episode of the Korean TV show Saenghwal-ui Dalin. The plain croissant has a thin, firm shell with open layers inside; almond, cream-filled and raspberry versions and a ham-and-cheese croissant sandwich use the same dough. Galette with unsweetened custard, olive kouign-amann and a cinnamon-glazed sticky bun sit alongside. In winter there is stollen, packed with rum-soaked nuts and dusted with powdered sugar; it is cut from the middle and the two halves pushed back together to keep. Many items sell out by weekday lunchtime. Seating is one large shared table plus a few small ones.
