The clear broth with potato and scallion produces a genuine home-cooking depth rather than an MSG-driven flavor, and it grows richer the longer it simmers. The chicken has a slightly chewy texture reminiscent of native breeds, and dipping it into the tangy-sweet red sauce adds layers of flavor that stimulate the appetite. The Busan-style chewy rice cakes are addictive in their own right.
