Coarse, irregular breadcrumbs give the tonkatsu a light crunch around thick pork that stays moist, with a toasted-nut aroma from the crust. Naengmomil, cold buckwheat noodles, arrives in dark chilled broth with slushy ice and a heap of cucumber; pan momil serves the noodles and dipping sauce separately. Ask for no cucumber when ordering if that is a dealbreaker. Weekday lunch queues form but move quickly, and only a few cars fit in front of the shop. Cold udon, a creamy curry, and a plate of four large inari sushi round out the menu.
