Ahyeon-dong Ganjang Gejang 아현동간장게장

Crab arrives cut into sections with the legs already scored, and the cold, soy-cured meat slips out without much effort. Ganjang gejang (raw crab marinated in soy sauce) is ordered by species: large flower crab, firm-shelled stone crab, or the smaller freshwater mitten crab. Yangnyeom gejang uses domestic flower crab tossed in red chili seasoning. Picked meat and rice go into sheets of dried seaweed, and the flower crab shell, still holding roe and innards, gets a spoonful of rice stirred in. Soybean-paste stew comes with the meal. The plain dining room sits behind the Saehan Building near Aeogae Station, and there is no parking lot.
