Sunmine Haengbok Gejang Dongdaemun is a soy-marinated crab restaurant on the second floor at 38 Eulji-ro 43-gil in Jung-gu, Seoul. The female-crab set costs 36,000 won per person and combines domestic female blue crab marinated in soy, fried-egg bibimbap, soy-marinated shrimp, butter-grilled shrimp, and the self-service bar. The crab arrives with roe and flesh inside the shell. Meat is pressed from the body sections and moved onto rice, where soy marinade and a small quantity of sesame oil bind the crab to each spoonful. Rice can also be placed inside the top shell and mixed against the remaining roe. Separating the legs and body before mixing keeps shell fragments away from the rice. The soy seasoning stays below an excessively salty concentration, allowing roe, meat, and rice to retain distinct roles. Marinated shrimp is served cold after aging in soy, with firm flesh.
