Yamadaya 야마다야

House-made noodles, springy and firm, show their texture most clearly in zaru udon, served cold with a dipping sauce. The hot udon broth is bonito-based and not overly sweet, while the bukkake sauce runs salty and is best poured a little at a time. Yaki udon, the stir-fried version, comes heaped with bonito flakes. Any udon can be upgraded to a set with tempura, a roll, salad and orange.
