Having held its ground in the Hapjeong dining district for over a decade, the restaurant's defining identity is its house-made noodles. The dough, composed solely of flour and salted water, undergoes a traditional foot-kneading process before being cut by hand to order - the rhythmic thumping of dough and the sharp chopping from the open kitchen build anticipation before the first bite. The resulting noodles have an exceptionally firm, chewy resistance that distinguishes them from machine-made alternatives. The cold bukkake udon is the best vehicle for experiencing this texture at its peak. The tsuyu is flavorful enough to enjoy on its own, so adding toppings gradually rather than all at once is recommended. Ordering the set adds inari sushi and crispy tempura, with the carrot and shrimp pieces standing out for their grease-free crispness at a level that rivals dedicated tempura shops. A serving of hongcho vinegar drink after the meal provides a refreshing finish. The compact space means waits are essentially guaranteed regardless of the time of day, and the absence of single-seat counter options may result in shared-table seating.
