The cham sundae-guk broth is milky and thick and arrives already seasoned and rarely needs extra salt. Sundae (Korean blood sausage) are made in-house and plump, and the liver and other offal in the bowl taste clean and nutty. Siraegi sundae pairs chilled dried radish greens with hot sausage, and another version wraps sundae in a lotus leaf. Small tables with ordering kiosks make solo meals easy, while a medium sundae hot pot packed with sausage and offal is plenty for two. The shop is in a basement near Seoul National University Station, marked only by a small sign at the building entrance.
