The bulgogi jeongol simmers thin hanwoo slices with glass noodles, mushrooms, carrot and onion in a clear broth that goes light on sugar. The noodles drink up the broth quickly, so fish out the meat and vegetables first. Hanwoo seonji-guk has soft, dense blood curd, and with a yukhoe bibimbap on the side it makes a beef meal without any grilling.
