Duck here is neither grilled nor smoked but boiled as suyuk, softer than pork suyuk and milder in duck flavor. Each lettuce wrap gets pickled cucumber, blanched chives and the house sauce. After the meat comes ori-tang, a gochujang broth simmered with small bones only. There is hardly any meat to pick out, but the peppery broth leaves the mouth feeling clean, and sujebi, hand-torn dough, goes in to finish.
