온천손칼국수쭈꾸미

Oncheon Son Kalguksu Jjukkumi is a kalguksu (knife-cut noodle soup) restaurant near Yuseong Hot Springs in Yuseong-gu, Daejeon, consistently ranked among the top noodle destinations in a city widely known as the kalguksu capital of South Korea. Originally located in front of the Yuseong foot bath park, the restaurant relocated and expanded to its current site, where a dedicated waiting room accommodates the steady volume of visitors. The signature dongchuk (surf clam) kalguksu features house-made noodles with a balanced chewiness and no raw flour aftertaste. The broth carries a gentle, clean essence from the surf clams, and the clam meat itself offers a firm, satisfying bite. The restaurant's true distinguishing element is its kimchi, which registers as notably spicy, though not quite reaching the extreme levels of Silbi-style kimchi. Dissolving a small amount of this kimchi seasoning into the clear clam broth adds a sharp chili dimension that transforms the soup into something markedly more complex. The jjukkumi (baby octopus) stir-fry is another popular order: the spicy octopus mixed with bean sprouts and wrapped in seaweed with rice creates an entirely different dining experience alongside the noodle soup. The bossam (boiled pork) is competently prepared with a soft texture, though not exceptional on its own, and pairs best with dried radish strips. Portions are generous across the menu and pricing remains reasonable. Waits exceeding fifty parties occur during peak hours, but the quick pace of noodle consumption keeps the line moving faster than the numbers suggest. A dedicated parking lot sits in front of the restaurant, though it fills during busy periods and overflow parking along nearby roads becomes necessary. Visiting after a soak at the Yuseong hot springs for a midday bowl of kalguksu is a highly recommended combination.
