It has been a haejangguk house in Suji for a long time, yet most tables start with samgyeopsal. Order the pork belly and a bowl of seonji haejangguk, with blood curd, intestines and tripe, comes free, and staff refill the broth whenever you ask. The pork is grilled for you on a thick iron plate together with kimchi, and eaten with scallion salad and shredded radish. Save a few slices for the end, when the kitchen stir-fries rice with kimchi, radish and seaweed. If you only want the soup, the teuk (special) bowl adds more brisket. Pork fat makes the floor slippery, and the room gets loud at meal times.
