Shin Songja Sinmasan Sikdang in Daegu's Namgu district is one of Daegu's most representative dwaeji-gukbap (pork soup rice) restaurants, distinguished by its use of the toryeom method. Toryeom is a traditional technique in which hot broth is ladled over rice and poured back repeatedly rather than boiling the rice directly in the soup, allowing the broth's flavor to permeate the grain while maintaining an ideal eating temperature. The broth uses a clear, milky sagol (bone) base that is remarkably light, almost reminiscent of samgyetang, yet carries genuine depth, setting it apart from pork soups in other regions. A subtle funky aroma characteristic of Daegu-style gukbap may be present, but adding dadaegi, minced garlic, saeujeot (salted shrimp), and pepper eliminates it entirely while drawing out rich umami. The most popular order is gogibap (meat rice set), where thick-sliced suyuk (boiled pork) arrives separately from the broth, meant to be wrapped in ssam with garlic, doenjang, and saeujeot. Even the fatty portions of the pork are processed to a pleasantly chewy texture that avoids greasiness, and the generous meat quantity makes the meal more substantial than its modest appearance suggests. Ttaro-gukbap (broth and rice served separately) and seokeo-gukbap (mixed version) are also available. The restaurant's exclusive amppong-gukbap is said to divide opinions with its soft texture and slight aroma, though in practice it tastes quite similar to standard pork gukbap. Small pieces of sundae appear in the bowl as well. Opening at nine in the morning, the restaurant draws a steady stream of hangover seekers, with cars lining up in the parking lot before doors even open. The dining hall is spacious with standing-height tables, and approximately eight parking spots sit directly in front, though lunchtime overflow can extend onto the adjacent road. The fast turnover keeps waits short, and prices starting at 7,500 won represent exceptional value relative to current gukbap market rates.
