Singsing Gejang Maeul 싱싱게장마을

Singsing Gejang Maeul is a marinated-crab set-meal restaurant at 40 Munsu 6-gil in Yeosu, serving soy crab, spicy crab, marinated shrimp, rice, soup, and banchan. Small three-spot crabs are used. Soy-marinated crab absorbs salty jang and a clear marine aroma, while yangnyeom crab adds red chili sweetness and heat. Diners press the legs and body of the soy crab to release white meat over rice. With spicy crab, the flesh is pushed from the shell and a small amount of red seasoning is transferred to each spoonful. Keeping the two sauces apart preserves the distinction between salty soy savor and sweet heat. After the body meat is removed, warm rice is placed inside the carapace and mixed with the internal crab paste and sauce scraped from the shell walls. This crab-shell rice is richer and nuttier than plain extracted meat. Wrapping a spoonful in seaweed keeps the loose grains together. Marinated shrimp provides plump, elastic flesh in soy sauce, contrasting the fine work of picking small pieces of crab. Doenjang jjigae brings hot soybean broth between cold seafood and salty marinade. Kimchi and other banchan vary texture alongside rice. The set follows a refillable baekban format for crab, rice, and side dishes. Eating soy crab, rice, stew, and then spicy crab prevents every sauce from being mixed into the first plate. A solo diner can receive the complete spread, while a group can keep soy and spicy crabs on separate plates and divide additional portions according to preference. The modest alley restaurant in Munsu-dong centers not on one large crab but on repeatedly extracting meat and seasoning from several smaller shells and carrying them through bowls of rice.
