The sign says galbi, but nearly every table is grilling woo-samgyeop, thin beef brisket slices that arrive soaking in clear soy sauce with sliced garlic. The marinade tastes faint at first and turns savory once the beef is cooked until a little crisp. Top each piece with seasoned scallion strips, dip it in the spicy red sauce, and grill kimchi on the side of the plate. Doenjang jjigae, a soybean paste stew, and rice turn it into a full meal. During rush periods you grill the meat yourself, and Friday and Saturday evenings bring a line near Exit 8 of Sillim Station.
