Ottogi Kalguksu 오뚜기칼국수

Near Mukho Port, jang kalguksu is ladled out from early morning. The soup leans on gochujang more than doenjang, so the first whiff recalls tteokbokki, yet savory heat outweighs sweetness. Thin noodles share the thick red broth with zucchini, potato, crumbled laver, perilla seeds and beaten egg, and kal mandu guk pairs the noodles with thin-skinned kimchi dumplings.
