Coarse panko shatters loudly around thick pork that is cooked firm yet stays juicy inside. The deungsim-ansim set (loin and tenderloin) puts both cuts on one plate: the loin has a fatty edge and more chew, the tenderloin is lean and soft. The Three Little Pigs set adds cheese katsu to the two pork cuts. Tangy pickles, roughly cut salad and mashed potato come alongside, and draft beer is poured.
