Naengmyeon Manheoyu 냉면만허유

The broth is steeped with Seosan ginger, and the ginger is clearest on the first sip, before any vinegar or mustard goes in. It is as subtle as Pyongyang-style naengmyeon, with a quiet sweetness from onions and other vegetables underneath. Only two dishes are served, mul-naengmyeon and bibim-naengmyeon, and the bibim version comes with a separate bowl of ginger broth that turns it into a spicy soup noodle when poured in.
