Its name translates to 'nameless noodles,' an ironic title for a restaurant that draws crowds from well beyond the neighborhood. What sets the place apart is the noodle-making process: dough is mixed and hand-cut to order, yielding strands far thicker than standard kalguksu, almost closer to sujebi in chew, yet free of any raw-flour taste. The seafood kalguksu arrives loaded with clams, dried shrimp, and dried pollack, producing a broth that is at once bracing, clean, and deeply savory. The chicken kalguksu offers a different appeal with its rich, full-bodied stock and generous pieces of tender chicken. Adding fermented chili from the condiment tray deepens the heat and complexity of either bowl.
