Skilled grill staff handle the cooking tableside with practiced expertise, ensuring perfect doneness without any charring, and they meticulously trim fins and other parts during the process. The restaurant uses custom-made convex grills fitted with ventilation systems underneath, allowing diners to enjoy the meal without smoke - a thoughtful engineering detail. Accompanying banchan include myeongyi-namul (wild garlic leaves), daepa-kimchi (green onion kimchi), gat-kimchi (mustard leaf kimchi), and buchu-jeorim (chive pickle), all of which provide excellent counterbalance to the rich eel. The daepa-kimchi in particular receives consistent praise. A complimentary janchi-guksu (banquet noodles) arrives as a finishing course, and the jangeo-tang (eel soup) and doenjang-jjigae are also noteworthy additions to the order.
