The broth for mul-milmyeon is said to simmer Korean beef bones and medicinal herbs for over three days, and it tastes clean and cold. Bibim-milmyeon has a punchy sour, sweet and spicy sauce that kids may find too hot; ask for broth on the side, which comes free, and pour some in partway through. Yubu-on-milmyeon, the hot version with fried tofu and crown daisy, is nutty, though the noodles lose some of their spring in the hot soup.
