The buckwheat noodles have a firm chew, and even the hot onmomil holds up without going soft, though its broth turns out fairly sweet. The deulgireum memil-guksu goes the other way, with no sweetness at all; it can feel odd at first, then the toasted perilla oil grows on you. Naeng-momil comes with its chilled broth on the side, to be dressed with scallion and laver before the noodles go in. The only fried sides are donkatsu, and cold naeng-momil usually gets a cheese donkatsu alongside.
