Order a set and the courses come one plate at a time, from jamon, salad and tapas through to paella or gambas and grilled dishes, each explained by staff as it arrives. The jamon comes first, with tomato sauce, marinated olives, bread and melon. The gambas shrimp are plump and springy, and the leftover garlic oil turns into an aglio e olio pasta. The paella is topped with mayonnaise, which some diners regret since it is not done that way in Spain. Booking ahead is the way to be sure of a table.
