Kodari, pollack dried halfway, has firm flesh that stays in flakes through a long braise in sweet, spicy red sauce. The radish lining the bottom of the pot drinks up the fish juices and sauce until it turns soft. The braise comes regular or spicy, and there is also a skate braise done in a similar sauce.
