For a place that fries all day, it is kept remarkably clean, down to kitchen ducts that look new. Thick-cut loin and tenderloin go into a fine crumb coat, and several salts with different aromas and a few sauces rotate as dips. Curry rice comes as its own plate. The two-person set closes early when ingredients run low.
