Jorim Myeongga 조림명가

Ureong dubu-jorim, tofu braised with freshwater snails, comes bubbling in an earthenware pot and scorches on the bottom unless you stir it right away. Heat comes in three levels: aegi-mat, standard and extra hot. The standard is far hotter than it sounds, and even aegi-mat, the mildest, has chili powder in it. The salty sauce soaks right into the soft tofu and plain rice disappears quickly; for fish, choose between braised mackerel with sauce-soaked radish and thick grilled mackerel.
