Jinbat Guksu is a 40-year-old noodle shop in Seongseok-dong, Ilsan, Goyang, famous for two appearances on the television program 'Master of Living' and visits from numerous celebrities. It also served as a filming location for the drama 'Hospital Playlist.' The weathered exterior and interior, filled with well-worn books and LP records, exude the charm of a genuine nopo (legacy restaurant). The core menu comprises janchi-guksu (banquet noodles), bibim-guksu, yeolmu-guksu (young radish noodles), and kongguksu (chilled soy milk noodles), with nokdujeon (mung bean pancake) as a side. The janchi-guksu broth is notably deeper than most competitors', built on a technique of steaming anchovy with grated radish and makgeolli lees to neutralize fishiness. The bibim-guksu sauce incorporates beef bone stock for a layer of umami beneath its tangy, spicy surface. The yeolmu-guksu features young radish kimchi salted, then fermented for two days with ground chili, fruit, and onion, delivering a refreshing chill ideal for summer. The kongguksu is thick and richly flavored, available only during warm months. All noodles use a springy medium-gauge strand that adds a satisfying bounce. The mung bean pancake is nutty and rounds out any noodle order nicely. Self-serve boiled eggs (two for 1,000 won) are a fun, practical add-on. With janchi-guksu at 5,000 won and bibim or yeolmu at 6,000 won (extra portion for 1,000 won more), a family of four can order one of each variety and eat to satisfaction for around 25,000 won, an exceptional value. Food arrives within seconds of ordering, powered by a streamlined system unusual for a legacy establishment. Located in a somewhat remote area surrounded by factories and farmland, reaching the shop requires a car. Parking is available on an open lot across the road from the restaurant, though spaces are limited. Meal-hour waits are common, but the inherent speed of noodle service keeps the line moving briskly.
