Jinbat Guksu 진밭국수

Anchovies are steamed with grated radish over makgeolli lees for the stock, so the janchi guksu tastes deeply of anchovy without any fishiness. The bibim guksu sauce has beef bone broth stirred in, which leaves a quiet sweetness under the tang and heat. There is also yeolmu guksu topped with young radish kimchi and a summer-only kongguksu, and every bowl uses springy medium-thick noodles. The shop sits among factories and rice fields on the edge of Seongseok-dong, hard to reach without a car; parking is on an empty lot across the road and space is limited.
