Every table is booked in advance, and with the owner cooking alone, reservations are hard to get. Domestic fresh pork belly arrives with wrapping greens and a whole head of house-made kimchi, and hongeo-jeon coats well-fermented skate in egg before pan-frying. Rice comes in a small stone pot; pour water over the crust for sungnyung, a toasted-rice drink.
