The hairtail arrives whole, either braised or grilled. The braise has a sweet, spicy sauce with radish and potato, and diners mash the tofu and fish into their rice, while the grilled version is crisp outside with moist flesh. Hijiki rice and sea urchin seaweed soup come alongside, and depending on the set there is also sekkosi raw fish, boiled pork and grilled mackerel.
