인하찹쌀순대
Inha Chapsal Sundae is a sundae-guk (blood sausage soup) specialist in Simgok-dong, Bucheon, Gyeonggi Province, that has held its ground at the same location since opening in 1985. Nearly forty years of operation have earned it a reputation that virtually everyone in the Bucheon Songnae area recognizes. The defining characteristic of this restaurant is its toryeom preparation method, in which the rice is pre-soaked in the broth so that every grain absorbs the soup's flavor before the bowl reaches the table. The broth itself diverges sharply from typical sundae-guk, resembling a clean, mild gomtang with absolutely no pork odor. The sundae-gukbap is served in a polished brass bowl and contains a variety of pork cuts that provide diverse textures, with a mild chili paste already mixed into the broth for balanced seasoning without further adjustment. The glutinous rice sundae was not originally on the menu but has since become a permanent fixture. A standard gukbap served in an earthenware pot comes without sundae, so distinguishing between the two when ordering is important. The assorted meat platter features neatly arranged slices of well-boiled head meat and liver, and dipping garlic into gochujang alongside these makes an excellent accompaniment to the soup. The kkakdugi may seem understated at first taste but gradually reveals deeper umami with continued eating. A dedicated parking lot allows convenient vehicle access, and the high table turnover rate keeps wait times short. The building's exterior shows its age, yet inside, the flavor has remained remarkably unchanged across four decades.
