Thick slabs of skate flesh come away in big spoonfuls with almost no fine bones to pick out. Walk-ins are not accepted: tables are booked by phone only, and getting through can take dozens of calls. The gaori-jjim, braised skate, uses both gochujang and chili flakes yet tastes gentler and less salty than it looks.
