The restaurant adheres to the traditional torim method of preparation, where scalding-hot broth is ladled repeatedly over rice and bean sprouts so the rice absorbs seasoning naturally while the sprouts retain their satisfying crunch. Cracking the egg into the bowl and taking the first spoonful releases a wave of sesame oil fragrance that blends with the clear, savory stock in a combination unique to this establishment.
