Soy meat has to be requested by phone an hour ahead so it can be soaked for the right number of plates; without it, a vegan order works as a walk-in. A foreign chef cooks while a Korean server explains to newcomers how to eat each dish. The chicken tacos take a house-made hot sauce, and asking for more cilantro brings a small bowl heaped full.
