Each bowl mixes glass-noodle chal-sundae with a traditional-style sausage (sundae is Korean blood sausage), so the bite changes from spoon to spoon. The pork-bone broth is clean with no gamey smell and takes well to a spoonful of dadegi chili paste; osori-gamtu, pork stomach, comes as a separate plate. Lunch waits can run past an hour, and putting your name on Catch Table before setting out cuts that down. Just before the evening opening it is relatively quiet. Even after you sit down, the food takes a while.
