Clear, icy mul-naengmyeon broth and steaming galbitang, beef short rib soup, share the menu at this long-running Ichon-dong spot. The rib bones in the galbitang are large and the meat comes away easily; the dogani galbitang adds slippery, springy knee cartilage. Bibim-naengmyeon is moderately spicy with fresh vegetables, and hoe-naengmyeon comes topped with seasoned raw fish.
