The smell of duck jumulleok clings to clothes for the rest of the day, so jackets go inside the storage seats and aprons go on. A bowl of nutty black sesame porridge arrives first, and the julienned potato tossed in with the duck is easy to mistake for radish until you bite it. The marinade is neither salty nor sweet, and the duck needs to cook through for the flavor to sink in; wrap it in perilla leaves from the self-serve side bar, then finish by frying rice in the pan.
