Grilling over charcoal brings out the natural flavors of the beef, and both the sirloin and tenderloin carry well-developed marbling and a tender texture that consistently satisfies. The dry-aged lineup uses grade-3 hanwoo, which through the aging process develops its own distinct character, different from but complementary to the premium cuts. Grilling rice cakes, mushrooms, and asparagus alongside the meat produces excellent combinations, and these items are available for purchase at reasonable prices.
