Herb-aged pork trotters (jokbal, boiled and sliced for sharing) come with chewy skin, tender meat and only a faint herbal scent, which makes them easier going for anyone trying jokbal for the first time. Bul-jokbal, the spicy version, is sweet-hot at about the level of tteokbokki rice cakes. Seating is split between a main building with tables up to a fourth-floor rooftop and an annex with a warm-floored loft. Friday evenings and weekends often mean a wait, and at busy times service runs more smoothly in the main building. Portions are large, and three people sharing is closer to the right size than two, with fluffy steamed egg dotted with small chopped bits and cold naengmyeon noodles on the side.
