Hanyang Jeonseonsaeng 한양전선생

Hanyang Jeonseonsaeng is a home-style Korean set-meal restaurant in a basement near Hanyang University in Haengdang-dong, Seongdong-gu, Seoul. Its principal jeyuk-bokkeum places stir-fried pork and cabbage in a hot ttukbaegi. Wok heat gives the meat a smoky aroma, and the earthenware bowl keeps the pork and sauce hot through the later spoonfuls. Cabbage retains a crisp inner structure rather than collapsing completely, contrasting with the softer, spicy pork. Red chili oil and concentrated seasoning collect at the bottom. When rice is mixed into that layer, pork fat, chili sauce, and separate grains form another texture after most of the meat has been eaten. Sundubu-jjigae adds soft, loose tofu curds and hot broth, moving away from the fire-seared surface of the pork. Kimchi-jjigae centers on fermented cabbage acidity and a deeper pork-based soup. Three kinds of assorted jeon contribute egg-coated, pan-fried surfaces and different fillings as both banchan and food for drinking. Small plates of vegetables, seasoned dishes, and stir-fries vary the table beyond one stone-pot main. Placing jeyuk and sundubu together fills the spread with glossy red pork, white curds, hot broth, pan-fried jeon, rice, and several banchan dishes. The plain basement interior keeps decoration secondary to earthenware bowls, rice bowls, and small side-dish plates arranged closely across each table.
