Gwang-eoda 광어다

The flatfish comes from the farm right next to the restaurant, and the gwangeo-hoe is cut thick, firm and springy, with a sweetness that builds as you chew. Gwangeo tangsueo is easy to picture as an ordinary fish cutlet until it arrives, and the thickness of the fish sets it apart. The fried fillets come with a sweet lemon sauce and are wrapped in lettuce to eat. There is also a rich seaweed soup made with flatfish. No reservations are taken, only a walk-in wait, which runs to about 30 minutes even in the early evening.
