Thick-cut pork neck and pork belly go over charcoal in a Seochon alley just west of Gyeongbokgung Palace. The moksal (neck) has evenly spread fat that keeps it tender with some chew, while the samgyeopsal (belly) crisps on the outside against a soft fatty layer.
