At lunch the kitchen serves galbitang, a clear beef-rib soup with rice on the side, and in the evening the same hall turns into a hanwoo grill house. Teuksang modum, the premium assorted platter of top-grade Korean beef, spreads several cuts on one plate so their marbling and grain can be compared over the grill. Diners finish with shiitake doenjang rice, simmered from soybean-paste stew, mushrooms and rice on the grill until thick.
